Prep Vegetables<br>Peel, grate, and slice all vegetables.<br>2. Cook the Soup Base<br>In a large soup pot, combine the vegetable broth and bay leaves.<br>Add the grated beet, potatoes, cabbage, and carrot.<br>Bring to a simmer and cook for 10\u201315 minutes, until the vegetables are easily pierced with a fork.<br>3. Make the Zazharka<br>In a skillet over medium-high heat, add oil.<br>Saut\u00e9 the chopped onion and green bell peppers for 7\u20138 minutes, until softened and lightly golden.<br>Stir in the tomato pur\u00e9e and cook for 30 seconds.<br>Transfer the mixture to the soup pot.<br>4.
