Ingredients:
- Banana paste (1 cup – mash about 2 medium bananas)
- Sugar (¾ cup)
- Eggs (2)
- Butter/Oil (½ cup – I use butter)
- Flour (1 ¼ cups)
- Baking powder (1 tsp)
- Baking soda (1 tsp)
- Dark Chocolate (optional)
Cooking Method:
- Separate the egg yolks from the whites
- Mix all ingredients together except the egg whites and whip to thoroughly mix
- Beat the egg whites together and add to the mixture
- If you’d like melt quarter cup of dark chocolate and add to the mixture. I melted the chocolate by placing it in a cup in a larger bowl of hot water.
- Whisk everything together and pour into a square (9×9 “) baking dish to bake at 350F for 40 mins
(Every oven is different, so the time and temperature may vary – so best to use your judgement. In Japan, we used 170C for 25 mins)
